Yields 10 x 3oz popsicles
Ingredients:
5 cups ripe, frozen strawberries
1 can full fat canned coconut milk
2 tablespoons lime juice
1/3 cup pure maple syrup
Directions:
1. Add all of the ingredients into a high powered blender. Blend until completely smooth. Taste mixture for sweetness. Add more maple syrup as desired.
2. Spoon the mixture into popsicle moulds. Place cover over mold, and insert popsicle sticks if necessary.
3. Freeze for 4 hours, until completely frozen (note, freeze for 6 hours if fresh strawberries are used).
4. When ready to eat, run the outside of the popsicle mould under hot water for 10 seconds. Gently pull on the popsicle sticks to release, and enjoy!
Cool tip: while strawberries are delicious, this recipe may be substituted with just about any fruit! Take advantage of what is in season and enjoy the best of what your area has to offer!
